Broiled Steak With Roquefort Cheese

INGREDIENTS

1/4 pound Roquefort cheese
1/4 cup cream
2 tablespoons Worcestershire sauce
2 (2-inch) club steaks, bones removed
Salt and pepper, to taste

Cream 1/4 pound Roquefort cheese with 1/4 cup cream and 2 tablespoons Worcestershire sauce. Work until mixture is smooth.

Broil the steaks on one side until brown. Salt and pepper, to taste. Turn the steaks and cover the uncooked sides thickly with the Roquefort paste. Broil again until brown. Serve very hot.

Makes 4 generous servings
